Baking for Novices – Blueberry Tart

Do you know if you can use baking powder with plain flour when you have no self-raising? Or if it matters that the recipe asks for large eggs and yours are medium?

If you do, you probably already know how to make Blueberry Tart, and it’s possibly a much fancier version than the one I’m talking about here.

But if you’re a baking novice – if you like your recipes with six ingredients or less, if you don’t bother sifting flour, if you only own one baking tray, and you don’t have an egg separator, this Blueberry Tart recipe is for you.

The baking we do is mostly inspired by blogs or cook books I have at home. But if I’m looking for a specific recipe and don’t have it, I always go to BBCGoodFood. Because I trust the brand and I’m risk averse and anyway, they have recipes for everything you could possibly want. So when I found myself with some extra blueberries last week, I searched and found this: Blueberry and Almond Tart

Look at how many ingredients you need – six! That’s my kind of tart. The recipe also includes a few drops almond extract and icing sugar for dusting, but I had neither, and I don’t think it mattered.

  • 85g softened butter
  • 175g caster sugar
  • 175g ground almonds
  • 2 eggs, beaten
  • 2 x 125g punnets blueberries
  • 23-24cm cooked shortcrust pastry tart case (I used a Jus-Rol shortcrust pastry case)

Method

  1. Heat oven to 190C
  2. Bake the frozen pastry case (for about fifteen minutes) then let it cool down
  3. Beat the butter and sugar together in a bowl
  4. Stir in the almonds and beaten egg
  5. Stir in half the blueberries and spoon into the cooked, cooled pastry case.
  6. Smooth the top using the back of a metal spoon, then scatter over the remaining blueberries, pressing them in lightly so they’re mostly submerged in the topping mix but the tops are peeping out
  7. Bake for 45-50 mins until the filling is golden and feels firm to the touch
  8. Cool the tart for 10 mins in the tin, then lift onto a serving plate

This was one of the easiest things I’ve ever baked so I my expectations were low, but it was (if I do say so myself) AMAZING. Husband and kids all agreed – best blueberry tart ever.

So if you’re a non-baker, and you want to make something that’s easy to do with kids, provokes relatively few rows, is very impressive to grown-ups, and is totally divine, this is for you.

Don’t forget to send me a slice. With or without icing sugar.
